This a brewing device created by Nucleus Coffee Tools based on a scientific research to increase retention of flavors which generally evaporate during brewing. These flavors are called Aroma Volatile Compounds and they are the nice coffee fragrance that fill the room during brewing. Hot coffee lands on the chilled rock which is usually kept in the freezer before use. The rock traps the aroma volatile compounds before they escape in the air resulting in a more flavorful cup than identical brews without chilling.

The chilling rock is the most crucial part of the chilled extraction method. It is made from food grade stainless steel and coated with a layer of titanium. Inside the rock is high density gel which enables it to freeze faster and maintain colder temperatures for long. The spherical shape and large surface area allows it to evenly and rapidly chill the hot coffee.

Brewing/Guidelines 

Requirements

Paragon brewing device, Dripper, Filter Paper, Server, Grinder, Coffee Beans, Drip Kettle (preferably electric with water temperature control), Scale (preferably with weight and timer)

a) Place the paragon device on the scale.

b) Adjust the drip tray arm (3rd level) to the side and place the server on the paragon base.

c) Adjust the 2nd level (chilling rock arm) close to the server then place the chilling rock from a freezer to the tray.
             

d) Place the dripper with filter paper on the 1st level (dripper arm) then adjust the arm to ensure the paper filter is close to the rock but doesn't touch the rock.  

e) Using a brew ratio of 1:15, put 15gms of medium to fine ground coffee in the dripper. Pour in 45gms of water and allow to extract over the chilling rock.

f) After 30seconds make a second pour of 45gms of water and allow to extract over the rock for another 30seconds until the flow subsides then move the chilling rock arm aside positioning it with the drip tray.

g) Complete the remaining three pours evenly, pouring 45gms each at 30seconds interval.

f) When brewing is complete, move the dripper arm aligning with the other arms then remove the server. Coffee should be ready in 3 minutes.
