Turkish coffee is a traditional  method of coffee preparation which involves brewing very finely ground coffee beans (finer than espresso) in a cezve over medium to low heat and serving unfiltered. Technology has seen the creation of modern day state of the art electric Turkish coffee machines that are more convenient compared to the traditional equipment.  Turkish coffee is widely consumed without spices however there are options of Turkish coffee mixed with ground spices like cardamon. Sweetening of Turkish coffee comes in 4 levels: No Sugar, Little Sugar (½ tsp ) , Medium Sugar (1tsp) and Sweet (2tsp)                         



CEZVE

Cezve is also known as ibrik amongst Arabs and briki among Greeks. It has a spout, a wide base, a narrow neck and a long handle.

The spout makes pouring coffee into the cup much easier, the wide base helps in heat distribution and provide stability, the narrow neck helps concentrate the foam and prevent spillage during heating. The long handle allows for easy handling of the pot and safety from heat.
Cezve was traditionally made of copper due to excellent heat conductivity, but is also available in stainless steel, aluminum and also ceramic which has a perfect appeal but not practical for brewing.

Ground Turkish coffee is combined with water and sugar + spices (both optional) then stirred gently  to mix and break any  lumps. Cezve is then placed over heat and allowed to cook until the foam begins to rise. Cezve is removed from heat and coffee poured immediately in a cup with the foam unfiltered as the grounds will settle at the bottom. Do not let it boil as this will lead to a bitter taste due to overextraction.


TURKISH COFFEE MACHINE

These are electric Turkish coffee makers with water tanks ranging from 0.33ltrs to 1.5ltrs. They come in single chamber which are suitable for small quantities or dual chambers good for larger quantities. Most of the machines are equipped with technologies that detect perfect foam levels that is similar to the foam level in the traditional Turkish coffee. The machines also has a technology that prevent coffee from overflowing  during preparation.

 Desired amount of Turkish coffee is put in the coffee making pot and desired sugar is added (optional). Coffee making pot is then placed on the heating surface. Coffee making button for desired volume is pressed which then activates water pumping process followed by coffee heating. Once   the coffee is ready, an audio warning and LED flash occurs as an  indicator that the coffee is ready. Immediately pour into the cup to ensure no foam or grounds are left in the pot.

The machine has two separate brewing chambers which allows preparation of up to 6cups of Turkish coffee at the same time. Number and sizes of cups are selected by pressing the relevant buttons. The amount of water per cup is 60ml (small cup), 70ml (medium) and 80ml (large).
